Honey Sesame Chicken

Ingredients:

Honey Sesame Sauce:

¼ cup chicken stock or water

¼ cup soy sauce

¼ cup honey

1 tablespoon sesame oil

½ teaspoon red pepper flakes (optional)

1 teaspoon cornstarch

Chicken:

¾ cup uncooked rice

1 tablespoon olive oil

3 cups broccoli, chopped into small pieces

3 cups peas, cut into small pieces

2 large chicken breasts, cut into small pieces

salt & pepper

red pepper flakes (optional)

sesame seeds

Method:

1. Shake together all honey sesame sauce ingredients and set aside.

2. Cook rice according to package instructions. once cooked serve in bowls.

3. Heat olive oil in a large pan. Add broccoli and peas. Cook for 5 minutes or until bright green and tender. Add to the rice in the serving bowls.

4. Add more olive oil if necessary. Add the chicken to the pan. Season with salt and pepper, and red pepper flakes (optional) Cook for 7 minutes or until cooked through.

5. Add the sauce to the pan and simmer for 2 minutes or until thickened.

6. Add the chicken to the serving bowls and drizzle with sauce. sprinkle sesame seeds (optional).
