rice paper rolls

Ingredients:
2 chicken breast shredded
Cabbage
Beansprouts trimmed
1 small red capsicum
Coriander leaves
12 x 22cm rice paper rounds
Sweet chilli sauce
Method:
1. Place 1 rice paper round in a medium bowl of warm water for 15 seconds or until is soft. Place on a clean tea towel or paper towel.
2. Combine chicken, cabbage, beansprouts, capsicum, coriander and everything else you want to add in the rice paper roll.
3. Fold ends in and roll up firmly to enclose filling. Repeat with remaining rice paper rolls and filling. Serve with sweet chilli sauce.
