beef and noodle stir-fry

Ingredients:

2 cloves of garlic

5 cm piece of ginger

1-2 fresh chillies

6 spring onions

1 red capsicum

2 Carrots

250g dried noodles

Vegetable oil

Method:

1. Peel and finely slice the garlic and ginger, trim and finely slice the chillies and spring onions, then deseed and finely slice the capsicum, finely slice the carrot.

2. Thinly slice the steak and cook the noddles in boiling salted water according to the instructions on the packet, then drain and set aside.

3. Heat a splash of vegetable oil in a large frypan over high heat, add beef slices, garlic, ginger and chillies and cook.

4. When cooked add it all into a large bowl, then splash more vegetable oil and add all the other vegetables. Cook them for 1-2 minutes, then add cooked noddles.

5. Divide the fired vegetables and noodles in serving plates. Return the beef to the frying pan, take off when heated though.

6. Then serve with the noodles and vegetables.
